Three times we saw what this city was missing
Fourteen years ago, nobody in Copenhagen sold a proper soft-shell taco. So we did. A few years later the city was full of Italian restaurants and a handful of diners, all of them costumes. Nobody served the Italian-American food New York actually eats. So we built a real one. Then the food London, Paris and New York were eating did not exist here. So we opened Levantin.
Three questions before anything new. Is it missing here? Is it playful? Can we do it great? Three yeses, or we say no.
Where we come from
CHOW CO traces its roots back to Copenhagen in 2012, a time when “Mexican food” in Denmark often meant low-quality Tex-Mex. Few locals realized they were missing out on the rich, vibrant flavors of authentic Mexican-inspired cuisine. Determined to shift this narrative, the founding brothers of Barburrito (now known as Mæxico) launched their first venture, aiming to bring the Danish people a taste of Mexican-inspired food with true character: homemade, high-quality, and brimming with flavor.
Today, under the leadership of founding brother Thomas Fabricius-Bachmann, Mæxico has grown into a restaurant group known for creating dining concepts that celebrate diverse flavors and cultures: Mæxico, Palazzo Diner and, most recently, Levantin, a restaurant blending Levantine flavors with a modern French bistro vibe.
